Fried Rice Recipe


This easy rice makes a great lunch or a perfect side dish. The rice can be cooked up to 3 days before or you can cook it and pop it in the freezer either way the rice needs to be cold.


Easy Fried Rice

4 cups of cooked cold Rice
Handful of diced Ham
Spring Onions thinly sliced
4 eggs duck or chicken
1 1/2 cups of Peas cooked
Salt
Olive Oil
Soy Sauce



You can use a wok, i don't have one so i use my french pan.
Heat up a little oil and fry off your ham, it does not need much.


Tip in your rice and chop it up to remove the clumps, stir fry for a min or so to evaporate any water.
Push the rice to one side, add in a little more oil


Whisk your eggs with a little salt and slid into the pan, cook off the eggs stirring like you are scrambling them, while they are still a little runny mix them through the rice.
Now add in half the spring onions and continue stirring until all the egg is cooked.
   

Add in your peas and stir fry a couple of mins more, then add in the rest of the spring onions.



Now your ready to serve.
I don't add soy sauce to the pan, that way everyone can decide how much they want to add to their own bowl.


That's it quick and easy Fried Rice.
I use this beautiful Hickory Smoked Ham that tastes divine, you can use any ham or bacon that you like or maybe even a smoked sausage or salami.
You can also add in bean sprouts, corn and prawns or anything else you might like.
Duck eggs were my choice and i like the fuller flavour that they add to the dish.
I like that its simple and not fussy, it makes a lovely hot lunch when you come in from working outside.
